Grape Reception
Hervé Tucki, La Chablisienne, Chablis, France. Receive juice instead of grapes or wine from the growers. Have a Foss wine scan machine and does analysis themselves. At reception they separate juice within the appellation, then they do a classification according to quality. A, B, C, D etc. Each classification has one big tank and they blend the juice according to quality before fermentation.
