Fermentation temperature

Kettmeir (Alto Adige) uses a range of fermentation temperatures to create a specific style of wine. Muller-Thurgau is fermented at cooler temperatures (14C) to retain the more delicate floral aromas. Pinot Grigio is fermented at a higher temperature (16C, never higher than 18C) to extract more from their relatively neutral grape (also Alto Adige Pinot Grigio fermented at lower temperatures tends to develop higher levels of acetate).
