Malolactic Fermentation – Co-inoculation

Lilian Barton at Chateau Leoville Barton (Bordeaux) prefers to have MLF (through co-inoculation with yeast for alcoholic fermentation) in the fermentation vat. The lower temperature in barrel means a slower MLF with more risk of brett, therefore she feels it is best to have gone through MLF before the transfer to barrel.
