Clos Culombu in Corsica's Calvi AOC ages its Vermentino Storia Di Carbessu in three types of vessels: 500 ml new oak; amphorae and stainless steel. The variations are to provide complexity while preserving freshness. In Croatia, Matocevic uses acacia to provide a resiny and citrus character rather than the vanilla that would come from oak.
