Lower alcohol in warm vintages

Stony Hill Winery in Napa. Desiring lower alcohol potential in grapes: - Vineyard manager will only leaf lower half of canopy which blocks most of the direct sunlight but still permits reflected sunlight which slows down maturation. -Also will do a technique called ‘raking’ where all clusters are gently ‘raked’ to knock any raisined berries to the ground This has helped lower their Cabernet Sauvignon alcohol in hot vintages such as 2012 to only 13.5-14%. This has helped with their desired style of a more elegant, fruit forward, restrained style without the massive phenolics associated with hot vintages. Problem with raisined fruit is it increases the skin to pulp ratio, causing too much tannin.
